OOPS!! Sorry, Cassie! I didn't realize you were aurond! Of course, to you too!! I was in comment 4, and I'm the one who got the casserole in and out of the oven.Guess I just didn't scroll back far enough when I was looking to see who's aurond. I missed e, too (and probably a bunch of lurkers).Larue, the rib roast turned out fine, given I had a couple of glitches, plus not cooking in my own kitchen with my own tools. I took it out when it was aurond 125 degrees, but it didn't get higher. I poked the instant-read thermometer in several places and got several different readings. Finally decided to slice it and it was still too rare for most of us, so I put it back in the oven. Then we exchanged gifts, and the roast stayed in a bit too long. It was fine for most everyone, but I would have liked it rarer. The flavor was great from the garlic, rosemary, thyme, Lawry's with cracked pepper, and evoo. There wasn't much left over when the hungry horde was done! There are no losers in this game, MsMolly!! Sounds DELISH!!!
